Sometimes….I don’t get changed all day…which just shows you how often I shower…that’s another story. Eeek!

Sometimes…I keep a big bag of chocolate in the freezer (usually Dark M&Ms or dark chocolate chips) and sneak bites during late night feedings.

Sometimes…I dream of coffee. No literally, dreams. That’s how much I love coffee and want more than 1 cup a day. It’s a problem. I think I’ve discussed this before though πŸ™‚ My brother comes in a few weeks and he drinks about 5 pots a day (no joke) so we’re stocking up on seasonal favorites!

Sometimes..I dress my kids up in fun hats and outfits…and they hate it…mwahahaha.

Sometimes…I work out. But usually, I spend my days cuddling with these 2.

Flavors of Fall

I’m typing this with a little girl on my lap so please excuse any typos πŸ˜‰

And you know how I got her to be quiet (other than by holding her…what a little love bug she is!)? Playing monster mash! She loves it πŸ™‚ She got so mad when it was over. What a cutie πŸ™‚

She also gets mad when the batteries in her beloved swing die. Poor baby!


Brother bear was also pretty upset because he kept spitting out his Wubbanub than deciding he really did want it after all.


Kids, I tell ya. πŸ™‚

So this week I’m trying to get back to really eating well. We’ve had a few quick dinner nights, that mostly included fast food or Mexican. Whoops! Not good for nursing or for trying to lose some post-baby pounds!

My first dinner this week is going to be some chicken sausage and an Autumn quinoa salad.

Autumn Quinoa Salad

1/2 medium butternut squash, sliced
1/2 onion, diced
1 large carrot, grated
Zest of 1/2 lemon
1 cup quinoa
2 cups water
1-2 tbsp apple cider vinegar

1/2 apple, chopped

1/4 cup dried cranberries
Extra Virgin olive oil
Salt and pepper to taste

  1. Roast butternut squash with olive oil, salt, and pepper at 400° until tender.
  2. Meanwhile, saute onion over medium-high heat until translucent. Β Add 1/2 of the carrot and continue to saute until browned, 7-10 minutes. Β Add lemon zest, quinoa, salt, and pepper and stir together.
  3. Heat for 2 minutes, then add water and mix. Β Bring mixture to a boil, then gently simmer until quinoa has absorbed the water and is tender, about 15 minutes.
  4. Add vinegar, remaining carrot, apple,cranberry an squash and mix together.

Prep and cook time: about 30 minutes


Prep and cook time with twins: about 2 hours

Friday Confessional

I confess…sometimes I bake because I want the sweets, but I always blame it on my husband wanting the sweets.

I confess…when the twins cry and I’m cooking, I let them go for a few minutes (as long as they’re safe, fed, dry and should be happy)

I confess…sometimes I think the twins are out to get me with their crying. They seem to take turns, and the other picks up as the first gets quiet. Coincidence or conspiracy? We may never know…


I confess…I sometimes buy flowers for myself. And my husband has only bought me flowers once. True story.


I confess…I really don’t care that he doesn’t buy me flowers. He gave me the best present ever this year…2 beautiful babies πŸ™‚

What's For Dinner (SoCal BBQ)

So this week’s for dinner we did some shrimp on the barbie!

It was a gorgeous Columbus Day weekend so we spent most of the weekend outside going all over Souther California. We went to Santa Monica and the pier, then hit up Long Beach and decided to stop at a pumpkin patch along the way!


It was a great relaxing family weekend and great seeing new parts of southern california!

When we got home monday night though, we wanted a quick and easy dinner. Nothing beats something on the grill…mostly because the clean up is minimal πŸ˜‰

Honey Mustard Shrimp and Peach Cabobs

  • 1 pound pealed shrimp
  • 3 peaches
  • 1 large yellow onion
  • 2 tbsp butter (melted)
  • 3 tbsp light honey mustard dressing

Simply cut the onion and peaches into slices and chunks, then put them all on the skewers. Mix the melted butter and honey mustard dressing together, then brush over the skewers. Grill for about 10 minutes, until shrimp is cooked.

We also decided to cook some sweet potatoes to go with it. We cooked them in the microwave for about 5 minutes, covered them in the same butter/honey mustard mix and tossed them on the grill for about 5 minutes on each side.

Quinoa Experiment

I think it’s been mentioned a time or 2 that I am not a fan of quinoa. I just can’t do it. I’ve tried it sweet, I’ve tried it savory, and there’s just something about the bitterness that I can’t get past.

But as I browse all the other blogs I read, everyone else seems to like quinoa. So am I doing it wrong? Or am I just not a quinoa girl.

I am more convinced than ever that it’s just not my cup of tea, after my experiment with quinoa flour.

First of all, when you buy the flour, it smells like cooked quinoa. Gag. It immediately went from a Whole Foods bulk bin baggy to a mason jar to get rid of the smell. Done.

And I immediately started googling ways to cook with quinoa flour. I read somewhere that you should roast the flour first to get rid of the bitterness. So I sucked up 2 hours of our house smelling like quinoa to roast it at 200 degrees.


I spread it out on parchment paper on 2 baking sheets to roast it.

And I will admit, it definitely helped take away the bitter smell, so I was somewhat optimistic of how the cookies I planned to bake with it would turn out.

Our parent’s of multiples group was having a bake sale fundraiser and I said I would bring some cookies that were gluten free or vegan for people with allergies. I’m not sure making cookies with a new flour that I was going to sell to people was the best plan I ever had, but I went for it.

I decided to make pumpkin chocolate chip cookies and leave out the walnuts for my gluten free option, and for the vegan cookie, Mama Pea’s peanut butter chocolate chip cookie ball’s were obviously the best option. I’m obsessed with them.

After roasting the flour, I baked the cookies just as usual, but only using the quinoa flour instead of my usual wheat/white combo.

And the result?



They stayed balled up, even after baking. So it was hard to tell when they were done because they looked exactly the same. Not sure if I needed to adjust the baking soda or baking powder in them?

I made a batch of the pumpkin cookies using white and wheat flour to keep around the house..mostly for late night snacking while we’re up feeding babies. There is nothing like a cookie at 2am to make being awake at all hours of the night tolerable.

You could definitely tell the difference in looking at the cookies as to which were made with quinoa flour and which weren’t. The top picture is with white and wheat flour, the bottom are the quinoa flour cookies. All mixed in with some peanut butter cookies.


The quinoa flour made them look very jagged and rough, the dough didn’t seem to soften at all.

As for taste, they really weren’t that bad. You could tell the difference between the 2 cookies in taste, but you couldn’t really pin point what the difference was, according to my husband. And one didn’t taste better than the other necessarily, just a little different.

So my ideas of using it again? I would definitely try it, especially if we were having gluten free friends over or my mother-in-law or sister-in-law (who both have gluten allergies) had a hankering for some cookies. Consider my MIL is a pastry chef though, I doubt she’d opt for me to make her cookies πŸ˜‰

So overall, a more reasonable way to get some quinoa in your diet if you’re like me and not a fan.
